Marinate the steaks in a marinade of soy sauce and honey, salt and black pepper to taste. Leave to marinate for a few hours. Pork loves marinade, let it brew.
Fry steaks in a grill pan in butter for 3 minutes on each side.
Brush the steaks with French mustard and sear for an additional half minute on each side. Wrap the steaks in foil and let rest for 10 minutes.
For a side dish, boil young potatoes until half cooked, and then fry them until cooked in butter with garlic and any herbs.
